Chef Adrian Quetglas has been in Moscow for more than a decade, meaning he has had his thumb on the pulse of change in Russia over the early new millennium as the country has moved away from the old Soviet ways to modern European / Western (no comment on current affairs between ourselves, US and Putin). He recently opened up a new spot in the City Center, AQ Kitchen which is claimed to be inventive Russian cuisine with a reasonable price tag.
